So, work 9-4!

OIAJ… Oats in a jar!! A peanut butter jar.

So, running out of peanut butter is sometimes a bad thing, sometimes a good thing. This is when it is a good thing.. Oatmeal fits perfectly inside, and you just use up whats left at the bottom in your oatmeal. It’s perfect!

Lunch, same salad as yesterday! I am boring this weekend I know.

And Peanut Butter Chewy bar.

Well, I wanted to fill you guys in before I go eat some din din and share some SUNDAY FUNDAY with the roomies. Here is a preview picture of what we are doing tonight..

Dinner and a show.

Soooo… since I have left you last, I had a filling dinner and took awesome pictures of it with my roomie Caley’s amazing camera! Maybe down the road when I get the hang of this blog thannnnng I’ll invest in one of those cameras. the picture quality is amazing. I should take a picture with mine, then hers just to show you the difference one day!

Turkey red onion spinach and mustard on that seedy roll from Whole Foods, and some broccoli and hot sauce on the side. Hit the spot.

So I had a nice little dinner with Caley, and caught up reading some blogs. Now I am watching the new Jim Carey’s Christmas carol. I am still full from dinner, but I may grab a little snack and glass of wine before bed. Its been that kind of week with finals and all, what can I say.

Today’s quote of the day didn’t really stick with me, but I’ll share it anyway because it was about going for your dreams. “Never sacrifice the permanent on the alter of the immediate.” – Dr. Bob Jones Sr.

Yeah, I don’t really get it either. But it was explained as when we start toward a new goal (food blog), we are often excited and that fuels us, but things change and life gets in the way and we may get discouraged. This quote is saying not to settle for the immediate relieve of giving up, but keep striving toward something worth while and permanent. Good things in life take time, and you have to be patience and keep carrying on.

It is also important to note that I learned its Brad Pitt’s and Steven Spielberg’s birthday today. Thank you Awe-Manac. Interesting haha.

Another thing I want to add today is a list of 5 things I am grateful for. I did that through out November, and it made me enjoy my days so much more. Gratitude is the only attitude for the season 🙂

So, I saw Santa today! He was in my line at AC Moore.. the lovely store I am a cashier at. (insert loser jokes here) He was really big, had a festive tee shirt on, and a Harley Davidson tattoo on his forearm. Santa’s human too ya know ;). I wish I could remember what he bought, but I was mesmerized. I hope he didn’t notice me staring!

Well before the excitement of meeting Santa, I had breakfast at home.

Light english muffin with peanut butter, and 1/4 egg whites! No fruits and veggies yet sorry. 😦

Kinda looks like a weird face. Well, it didn’t photograph well, but it hit the spot.

Then, after a HUGE misunderstanding about my break time. I ate lunch at 12.30 ish which included a variety of colors. Color is always a good thing. Food, walls, and otherwise.

I LOVE that second picture. The first was just for effect. I wanted everyone to see the view of the lovely uplifting break room at AC Moore. I love the second picture though! So, it was a salad, packed with spinach, cucumber, peppers, tomatoes, fat free feta, avocado, black beans, AND marinated artichoke hearts. The artichokes really give the salad flavor. I brought salsa as dressing, but I didn’t even use it. It was yummy I ate the whole thing.. Then back out to work.. not much to add there. 7 hours as a cashier isn’t too excited. I probably say, “Do you have a rewards card?” in my sleep. I got another little breaky which was good, and I had a Kashi Chewy Honey Almond Flax bar. Yummy.

I finished work at 5, got paid, and am sitting on the couch watching Elf!! I am off to figure out whats to eat for dinner, and then I could honestly pass out. I’ll post once more before I hit the hay though!

TGIF!!!!!!! For so many reasons..

1) Cinnamilk

3) Getting paid to decorate Christmas cookies

4) Pizza

Breaky, aka Leanne’s favorite meal, was a bowl of half Cinnamon Oat Crunch/half puffed rice with soy milk and I also added a half a banana with some sunflower seed butter for some fruit and protein action. The highlight of this concoction was when the soy milk turned to delicious cinnamilk (!) because of the cereal.

OK! a few shout outs here.. one to my roommates for making me become a novel reader this semester. I mean I have always liked to read, but normally I don’t think I have time during the school year. Well, I am proud to say I have finished 9 novels since September, and this has been my busiest semester by far. SO THANK YOU ROOMIES. Also, shout out to those lovely ladies, because they would appreciate the cinnamilk (!).. it was an invention in one of the books I read Stupid and Contagious by Caprice Crane. Good book, pick it up if you like chickky flickky type deals. Moving on, the last shout of goes to Trader Joe’s Sunflower Seed Butter. UNBELIEVABLE. If you are looking for an alternative to peanut butter or if you are allergic, I recommend this or almond butter. Both of them are very different then peanut butter but very delicious.

I wish I could write about all the exciting things I did between breakfast and lunch..but I literally did nothing. By nothing I mean I watched Rachel Ray and the View, and pretended to study. (I actually should have studied more but that’s a story for later) So lunch came fast and early because I had my exam at 12.30..

Egg white scramble with grape tomatoes, spinach, and red onions. (Hot sauce and salsa on top of course!) Then a light English muffin on the side. I sprinkle cinnamon on the top, sorta like cinnamon raisin bread, yummmm! I guess cinnamon could be added to my list of must have condiments. I put cinnamon on everything, and i don’t just sprinkle it, I pour it out. It’s suppose to be good for your blood sugar, so I hope it helps haha.

In between lunch and dinner I was a busy little bee.. I had my last final at 12.30 which was so hard. I don’t want to go into detail, but I hated this class and professor. I blanked on the test, majorly. OH WELL. its in the past now. I finished by 1.15 because I was fed up, and I went straight to babysitting. The family I babysit for is awesome. They have four children who are 6, 4, 2, and a 7 month old baby! Adorable, but they keep me on my toes. So, yesterday I made those cute little treats for them, and I also baked sugar cookies so that we could decorate them today. I like to keep the kids busy, time goes by faster..

Here are some of the finished products and supplies.

It was really cute. I took a lot of pictures of the kids too so I might print them out for their mom.

I packed healthy snacks for myself so I wouldn’t be tempted to eat a million cookies.

I had some carrots, slices of red peppers, and black bean hummus from Whole Foods. I didn’t take a picture though. It was a busy afternoon. Then, after running around with the babies all afternoon I started to get hungry by 5.30, so I had this beautiful apple.

Their dad got home around 6.30 with a pizza.. and asked me to stay. I think we both know what happened next, I stayed because I didn’t last time, and its Friday so 2 slices of pizza is allowed. Its a rule. Needless to say, I am still a little camera shy so I didn’t whip out my camera and take a picture but I promise if you picture a slice of plain pizza in your head, that’s what I had x2. Now, let me explain something. This pizza is kinda a big deal because it is the first pizza I have had since I got back from Italy (where I studied abroad) in July. OMG. How many months has it been.. five or so? Yeah, that sounds crazy, but I had a good reason for it. Pizza in Italy is out of this world. Obviously, its Italy, where else would you go if you wanted pizza? So, I made a pack with myself to never have pizza in America again. I was going strong, but again.. its Friday. Why not. Pizza sounded good. So I dug in, and two slices later I was stuffffffed. I probably would have been good with just one, but I was so excited about it and it was actually good. So I went for that second piece. Too much. My stomach feels better now, but I had a serious food baby going on.. deep breaths.

So, overall very successful day. I want to watch Christmas movies and pass out early.

Snow + senoritis.

Snow + senoritis = lack of studyyyying. oh well.

OK so its not the blizzard we had last year, but its the first snow fall of the year!! That’s very exciting and it helped to put me more in the Christmas spirit and less in the studying spirit! But that’s ok.. While avoiding studying I made my Lentil Soup from Whole Foods and had a half of a  fresh seed roll from there. Very good..

So.. I am off to read some of my favorite blogs and relax. Might eat the rest of my soup and other half of  the roll if i get hungry. Maybe a Christmas movie with the roomies is in the future tonight? Such a good ideaaaaaaa. 🙂

Hi alllllll!

 

So, today I am going to do a full day of posts, one for each meal and snacks, but I can’t promise that everyday! Today is a good day to start because I can get it going and write good posts for each meal! So, this morning I went to Whole Foods and picked up some soup and fresh rolls for dinner tonight (pictures later), and a yummy black bean hummus that looked good. If you have never tried hummus.. do it! Its not as scary and vegetarian as it sounds. After Whole Foods I had to make another stop for my Daddy’s Christmas gift which I can’t disclose in case my family decides to start reading! Who knows? haha. Then, I stopped at target to get supplies to do some holiday baking, if you can call it that. I came home.. started blasting Christmas music and started to fake and bake! I mean the oven was involved, but nothing actually had to cook. I got the idea from a website:

Hershey Kiss Pretzel Bites! Well, that’s what I’ll call them..

Super duper easy. Take pretzels (holiday shaped ones!!) and put a Hershey Kiss on each one. Pop them in the oven at 170 degrees for 6 mins! Very specific, but it works, and as soon as they come out top them with anything you want. I opted for crushed up candy cane we had in the house, but M&Ms work or sprinkles! Get creative. I made them for the kids I babysit for a “special snack” tomorrow, so I kept them simple, but all the different kinds of Hershey Kisses that are out look so good. I wanted to try the mint ones, but I refrained..

While they were baking and cooling, I munched on carrots and make a quick, colorless lunch, which isn’t a good way to start this blog, but I can’t eat just fruits and veggies! So, technically this could be a breakfast or lunch. Light English Muffin toasted. 1/4 cup egg whites. and a little proportioned slice of 2% cheddar cheese. I HATE fat free cheese. I use it sometimes.. but it tastes like rubber and doesn’t melt.. Something about that seems funny to me. 2% is worth it, and if its the portioned size, then its not over doing it. I added more carrots on the side and some Frank’s hot sauce to dip.

and YES this is an owl plate. Anyone who knows me knows that I am obsessed with owls. Its a long story so I should just get it out of the way now. My college’s mascot is an owl, so my thoughtful sister (who is in the picture with me on the info page, she is my bff<3) decided to make me an owl piggy bank. It spiraled out of control from there.. my mom started buying me everything in sight that had an owl on it, and now I have a nice little collection. Maybe I’ll take a picture someday and post it. Bottom line is I have learned to love them..and this is my favorite plate so it will be making many appearances. The owls are here to stay.

But anyway, back to Frank’s hot sauce because condiments are very important to me. Basic everyday condiments that some people take for granted can add so much flavor and are super healthy.

Here is my must have condiment list:

1)Frank’s hot sauce

2)Salsa

3)Mustard

4)Grated Parmesan cheese

I honestly put them on EVERYTHING. I use salsa instead of dressing most of the time, and mustard is perfect for dipping anything in. I can’t think of anymore right now, but when I do I’ll let you know!

What are you favorite condiments and combination’s?

So, today is my one day off during this craziness they call finals week, and what time do i wake up? 7.40am!? ahhh. that’s earlier then my normal alarm on weekdays. Anyway, I blame this inability to sleep in on the fact that breakfast is my favorite meal of the day, and its the first thing on my mind when I wake up in the morning. I mean I didn’t try anything new this morning.. I wanted to start with my winter classic. Oats with banana and peanut butter. YUMMM! 🙂

1/4 cup old fashioned oats

~1/2 water

splash of soy milk

1/2 banana mashed in

2 globs of natural PB. (that’s a lot, most normal people probably don’t want that much PB)

Now, I cook it on the stove. I think it turns out creamier, but many people just stick it in the microwave. The stove takes a little bit longer, but its worth it to me. So, I boil the water, which takes no time, then I dump the oats in and shake some cinnamon in with them, and turn the heat done. A couple mins later I add some soy milk, then cut up the banana and add it to the mix. Then I use a fork and mash it into the oats, using the sides of the pot. I know this sounds like a process, but I promise, its worth it!! After it reaches the consistency that you like your oatmeal, spoon into a bowl, and then scoop as much or little PB as you want. You can get really creative with the toppings too. Oatmeal is a great base for breakfast. I need to try some new recipes with it as well..

I have a couple quotes for today. I read 2 books in the morning. One is called the AWEmaniac, check it out! and one is called Good Mornings. They are both positive, inspirational  books. I am a sucker for self help books haha. I also get a BBM from a group that sends out positive quotes too.. So, sometimes I am on overload, and sometimes the quotes actually hit home for the day. Today was one of the home-hitting days, so I figured I would share..

This is a perfect quote for the morning because it is giving us the change to focus our energy on today! Today is a blank slate, and it can be whatever you want it to be. How often do we worry about what happened yesterday, what we didn’t do yesterday, or something someone said or did yesterday? Too often.. if we take that energy and use it in a more positive way, we will feel happy and healthy.

This is a quote about acceptance and gratitude, which I believe are the essential things to being happy. Happiness is a moment by moment choice. We cannot blame our happiness on anything but ourselves. (easier said then done) So, what does this have to do with the seasons? Sometimes life brings us changes that we don’t like, but instead of fighting the changes and wishing for a time that has past (spring), we need to accept the change and learn to be happy with what is going on around us right now!

Well, I am off to finish breaky with my morning shows, then go run around for some Christmas gifts, maybe make some Christmas cookies for the kids I babysit! YAY! These stores may happen to be close to Trader Joes and Whole Foods.. OH NO..so maybe a food appearance from  one of those stores will happen? I don’t know! Let’s hope so!
